This section collects our engineering material on vacuum cooling — precooling of fresh produce, rapid cooling of cooked food and vacuum freeze drying. It comes from project records and equipment selection work, organised by topic.
Working Principles
- Phase change and heat transfer in vacuum cooling
- Two-stage evacuation in food vacuum coolers: the water ring pump removes the bulk of the air, the rotary vane pump takes the chamber down to the working pressure. Vegetable precoolers run on rotary vane pumps.
